Two Calexico Truck Recipes
Pico de Gallo
2 ripe tomatoes, chopped
2 tablespoons finely chopped onion
Juice of ½ lime
2 tablespoons chopped fresh cilantro
Salt
Freshly ground black pepperMix ingredients together in a small bowl. Season with salt and pepper to taste.
Guacamole
1 ripe avocado
Juice of ½ lime
1-2 tablespoons chopped fresh cilantro
Large pinch of Kosher saltIn a small bowl, mash avocado with a fork, then mix with other ingredients. Serve immediately. To store for a few hours, press a piece of plastic wrap down onto the surface of the guacamole and refrigerate.
